Sant’Ambrogio Cooking Class - Personalised Traditional Tuscan and Mediterranean Cooking ClassesMake Sant Ambrogio Personalised Cooking Class part of your personalized Florence itinerary using our Florence attractions planner.
Sant’Ambrogio Cooking Class (SACC) is the dream of husband and wife team Lee Cogher and Cecilia Cascella and their close friend Meri Maccari.
We specialise in offering Personalised Traditional Tuscan and Mediterranean Cooking Classes in a friendly and unpretentious ambience for guests with all levels of cooking experience.
We believe an awesome and memorable cooking class should be fun, educational and personalised. We encourage our guests to let us know if they have any individual requests or preferences in advance; it may be that there’s a specific dish or a food category that interests you and we welcome the opportunity to create a personalised menu that we can prepare, cook and enjoy together. Or simply furnish us with your budget and we’d be happy to create a tailored menu for you.
We try to limit our guest numbers to a maximum of six (6) and working with only fresh ingredients purchased from our favourite stallholders at Sant’Ambrogio Market and local stores, together we prepare and cook a delicious lunch that you can recreate.
Cecilia and Lee’s modern/traditional home, complete with its open contemporary fully fitted spacious kitchen and preparation/dinning area, offers an ideal setting for an educational and memorable cooking experience.
I was born in Florence and spent many hours with family members and friends preparing and cooking traditional rural Tuscan dishes before travelling to all corners of the globe during a successful career in the world of fashion. However after two decades of globetrotting I followed my passion for cooking. I attended the intense cooking course at CFT (centro di formazione professionale del comune di Firenze), where I taught and collaborated with master-cook Benedetta Vitali. I have an extensive repertoire for traditional Tuscan, Mediterranean and Asian dishes, but have a penchant for Traditional Italian Homemade Pasta, Sauces and Deserts. Some of my favourites dishes include: Crostini Misti Toscani, Ribollita, Zuppa di Ceci, handmade fresh and stuffed pasta such as Ravioli, Tagliatelle, Pici, Fagottini, Gnudi (and every other kind of pasta you can dream of), Pizza, Arista, Piccione, Faraona, and traditional Tuscan deserts such as Torta della Nonna, Tiramisu’, Panna Cotta, Crostata and Zabaione.
I am from Guernsey; a small island located 40 kilometres west of France. My parents are caterers and we owned several hotels and restaurants. My passion for cooking began when I was 10 years old, I would spend most weekends and school holidays helping my father and our chefs prepare, cook and serve a vast range of European and Mediterranean dishes before studying catering and hotel management at the College of Further Education. I was fortunate to cook alongside Oswald Steinsdorfer at La Fregate Hotel and Restaurant http://lafregatehotel.com/restaurant/ known as one of the best restaurants in Channel Islands. At the age of 22, I managed a 32-bedroom hotel, two restaurants and two lounge bars before moving to Tenerife, where I met and feel in Love with an Italian Beauty.
Some of the popular dishes I served in our restaurants include: Homemade free-range Duck Liver Pate, Crab Gratin Thermidor, Deep Fried Garlic Porcini Mushrooms, Moules Marinières,
Fried Zucchini Flowers, Sauté Scampi with Lemon Cress and Garlic, Freshly Smoked Scallops served with Horseradish and Dijon Mustard Dressing, King Prawn, Lemon and Black-pepper Soufflé, Chateaubriand, Roast Pork Loin, Carre d'Agneau. During my time in Guernsey I created individual sauces to accompany locally caught fish and crustaceans such as Sea Bass, Brill, Monkfish, Turbot, Plaice, Chancre Crab and Lobster.
I have a genuine love and knowledge for traditional Tuscan and Mediterranean dishes and its been said that my passion for cooking is contagious.
I head up pre/post guest relations, administration and social media and have been known to give an Italian lesson or two!
The Sant’Ambrogio area is one of Florence’s best-kept secrets; this is where locals shop, chat over coffee and meet for an aperitivo! Sant’Ambrogio open market offers organic and kilometre “0” products, plus fresh meat, salami, fish, cheeses, legumes, bread, pasta and much more. Our home is only a 3-minute stroll from Sant’Ambrogio market.
Circa. 5 hours
We are happy to meet you for coffee at one of the Cafés near Sant’Ambogio market before selecting only the freshest local and seasonal ingredients from our favourite stallholders or you can meet us directly at the class. Whichever you choose, we guarantee a fun and memorable experience and outstanding lunch together.
